Here's a quick, cheap, and easy lunch...oh, and it's good for you too!

whole wheat tortilla or whole grain tortilla or sprouted grain tortilla
1/4 refried beans
1 to 2 T. minced onion
lettuce (any salad greens you have)
grape tomatoes
kosher salt (to taste)
1/4 tsp. dried cilantro (more or less; to taste)
There are really no directions, just assemble and eat! I spread the refried beans out on the tortilla first to "hold" the lettuce a little.
I also found the easiest way to eat this was to slightly tuck one end in and wrap the other ends up like a traditional hard taco would be folded.
This seems simple, but it is delightfully fresh and surprisingly filling.
I have a busy schedule and this is fast and easy to make. You could also put the components for it in a container and easily assemble it for lunch at work.
P.S....I'm down 3 pounds so far.
What I look for on the label when purchasing whole wheat or whole grain products:
- No use of the word "enriched".
- No high fructose corn syrup. I prefer no sugar at all, but definitely think twice before getting anything with high fructose corn syrup. Do not believe the "sugar is sugar" commercials.
- No use of the word "hydrogenated". Hydrogenated oils and fats have had their molecular structure altered in such a way that products can have a longer shelf life...but it is not good for our insides. This is what they are calling "trans fats" but beware! Products that contain hydrogenated oils in part of their make up can still claim "No trans fats" on the label, so read the ingredients before you buy!
