What's Cooking Wednesday: Blueberry Muffins!

I've been searching for some ways to make breakfast easier at my house, particularly for my son who does not enjoy typical easy breakfasts such as cereal, waffles, etc.

In that search I have tried a few things such as frozen breakfast sandwiches I made myself (a big hit) and homemade "hot pockets" (mediocre reviews from BubbaBoy8).

I want things that I can freeze and defrost easily, things that will make our mornings easier and things that will give him a healthy start to his day.

Onceamonthmom.com is all about cooking and freezing in large batches to cut down on the every day labor in the kitchen.  I love the concept and while I have not gotten to the point where I cook all day for one day to preserve time the rest of the month, but I'm thinking about it. 

Honestly, I'll never do it.

In the meantime, she has some interesting recipes and a very user-friendly site.  Click here to check out the blueberry muffin recipe.  I love that this recipe uses oats, bananas and blueberries.  I love that it has a small amount of flour and sugar.

I should have tried to make it with spelt flour, which would have been much healthier than the white flour I used.

When I made these this morning they looked and smelled wonderful.  When I removed the cupcake wrapper (so much easier than spraying the pan), it came apart a little and when I bit into it, it was not like a traditional muffin.  It was...more moist, I suppose.  I think it was the banana...yes, that's it.  It was more of a very moist banana bread instead of the cake-y texture I would expect from a muffin.

I've got to tell you, by the time I was eating the top, I was in love.  It's now been 20 minutes or so and I have to say I am stuffed.  And yes, I only ate 1!

These muffins are a big win.

I'm going to freeze them before I eat all of them.

boiled eggs are a great source of protein and you can keep them for awhile in the fridge. I try to give my kids something with protein in it, so they don't go to school on a sugar high and then come crashing down in the middle of the morning. I seriously think that this is a problem with the typical breakfast cereals.

Boiled eggs are a great go-to idea if your kids like them.
